Summer Pattypan Squash

This guy volunteered in my garden early in the spring and after harvesting a few, I had to figure out what to do with them. So, here’s an Italian dish for your summertime dinner table!


  • 1-2 pounds Pattypan Squash

  • 1T Cooking Oil of choice

  • ½ Large Sweet Onion, Diced

  • 4-5 Cloves of Fresh Garlic, Diced

  • 1 Pound Ground Meat or 1 Cup Cooked Quinoa

  • 2 Bell Peppers, Diced

  • ¼ Cup Parmesan Cheese, optional

  • Marinara Sauce

  • 2T + 1 tsp Italian Seasoning

  • Salt & Pepper to taste




  1. Pre-heat the oven to 425F and spray a cooking sheet with Avocado Oil or grease lightly with butter. 

  2. Trim the stems and cut the squash into bite-sized pieces. Place in 1-layer on baking sheet. Season with 1tsp of Italian Seasoning, Salt and Pepper. Cook for 22-26 minutes. 

  3. Heat a large skillet to medium heat. Add 1T cooking oil for about 1 minute. Add diced onion and cook 2-3 minutes. Add diced garlic and 2T seasoning, salt and pepper. Cook until fragrant.

  4. Add protein of choice: ground turkey, beef, bison, or quinoa and cook through.

  5. Add diced bell pepper and top with parmesan. Cook until cheese is lightly melted. 

  6. Serve squash, protein and marinara sauce 🙂
