What’s the deal with it? Does it work?
The foundation of good nutrition is whole foods. Then, start applying the biochemistry and think about how to optimize your insulin response to foods- this approach is how you can change your composition, especially if you want to loose body fat, age slower, lower your risk of T2 Diabetes, and or have more energy in your day-to-day.
I’m sure that you’ve seen the premade cleanse drinks, gummies and other products on the shelves that advertise weight loss by including a magical ingredient- apple cider vinegar. What’s the deal with it? Does it work?
The mechanism at work here is the ‘magical’ component of vinegar, acetic acid. A daily dose (1-2 Tablespoons) of vinegar can slow the glucose absorption into your bloodstream by up to 30% and then flatten the consequential insulin spike by up to 20%, especially if consumed before a meal containing sugars and starches. Trivia fact- acetic acid even affects your dna, increasing the rate at which our mitochondria (the power house of our cells) burn fat.
So I go back to those gimmick products at the checkout lines in your pharmacy… If the purpose of vinegar is to help manage glucose and insulin, then any product that has added sugar (even honey, agave and maple syrup) defeats the purpose. More so, you need a dose as strong as 1 tablespoon for the affect, and many of these products do not even contain a third of that.
The OG strategy is adding that 1 Tablespoon dose of vinegar to a glass of water first thing in the morning- but it doesn’t have to be that rigid. Suppose you’re not on-board with a little apple cider vinegar or even just white vinegar to start your day. In that case, you can substitute it for a potent glass of lemon water (fresh juice of ½ a lemon) or try a mocktail- the recipe has been directly taken from The Glucose Goddess- I highly recommend it!

Remember that flattening these curves lowers inflammation, slows cellular aging, increases energy levels, balances hormones, and sharpens brain functioning.
